Cinnamon Roll French Toast

Cinnamon Roll French Toast

 2 (17.5) oz cans refrigerated cinnamon roll
2 Tablespoons melted butter
4 eggs

Heat oven to 350°. Melt butter in baking dish in the oven. Stir in cracker crumbs. Remove one-third of the mixture; set aside. In medium bowl, combine remaining ingredients; spoon into casserole over crumbs. Top with reserved crumbs. Bake about 35 minutes or until crumbs are lightly browned and mixture bubbles in the center.

This dish has sparked raves from guests, although we have made it so often, it's been in retirement around here lately. This is an especially kid-friendly dish - a great way to get your kids to eat their broccoli!
